September is here and I finally feel like pumpkin chocolate chip recipes are totally acceptable now! Even if I eat them year round. Remember the Blueberry Protein Muffins? Since I discovered those I’ve been dying to turn them into Pumpkin Chocolate Chip Muffins. So of course I did!
Starting now I am admitting to crushing on anything with pumpkin and chocolate chips. It’s an addiction but not a problem with this recipe since it’spacked full of protein from Kodiak Cakes Power Cakes Flapjack and Waffle Mix.
How to Make Pumpkin Chocolate Chip Muffins
Just like the Blueberry Protein Muffins all you have to do is make the mix to directions and add 1/2 cup pumpkin puree and 1/2 cup mini chocolate chips! The back of the box says you can ad 1 cup but I think a 1/2 cup is plenty! I also added 1/2 Tbsp of pumpkin pie spice. Ok I probably added a whole tablespoon but that’s because I really really like it.
I made a double batch and let them cool on the counter before putting them in baggies to freeze for a quick breakfast or snack. I then celebrated my baking victory by laying down in bed to watch something on Netflix. About 2 seconds later my 2 year old came walking in with half a muffin. The kid pulled himself up the counter, grabbed a muffin and ate half of it before walking down the hall to my room. He now eats 3 for breakfast if I let him or if he steals one of mine (this happens more than you might think!)
