How to Make Sweet Potato Hash Browns
I’ve been making this for breakfast for a couple of weeks now and I wanted to make sure I had it all figured out before sharing it here with you. Trying to eat healthier is hard when you have little ones running around. They are especially impatient with me when it comes to breakfast. So I typically get them a bowl of cereal or oatmeal and then start to make this for myself.
Prep: The easiest way I’ve found to prepare for this breakfast is to make up the “hash browns” ahead of time for the week. And even easier than shredding sweet potato for days is to use a spiralizer. 1 sweet potato lasts me about 4-5 breakfasts.
Eggs and Sweet Potato Hash Brown Breakfast Recipe
- 1 cup spiralized sweet potato
- 2 eggs
- Olive oil (in spritzer)
- Salt, pepper, thyme to taste
Place spiralized sweet potatoes in a skillet on medium to high heat. Cook until soft. Spray with olive oil and season with salt, pepper, and thyme to taste.
Push sweet potato to the side or place in a bowl. Spray pan with olive oil and crack eggs in the hot skillet. Salt and pepper to taste. Separate egg from the skillet with a spatula and flip. Cook until desired (I like mine sunny side but cooked a bit more than others might like).
Place on sweet potatoes and enjoy!
