Last week I talked about my new relationship with food and how protein is helping me not snack on sugary sweets. But eating all of your protein in chicken can get boring fast! These Blueberry and Protein Breakfast Muffins are easy to make and help me feed my sweet tooth in a healthy way!
Not only are they easy to make but you can make a double batch and freeze them. I grab two (which is one serving) for breakfast and I have no desire to snack until lunch. Of course I do snack in between but now I grab carrot sticks, cheese, or something that is sustaining! Did I tell you I love the way eating more protein makes me feel?
Before I discovered these muffins I would buy the “just add water” mixes that cost $1 and between my husband and I we could eat two packages! Talk about eating more than you need to and probably not WHAT you need to! Now we get protein and fresh blueberries for breakfast.
Here’s how to make these Blueberry and Protein Breakfast Muffins. Start out with Kodiak Cakes Power Cakes. You can find these at Target or online (Target has the best price). When my mom was in town we were clearing the shelves!! It’s a waffle mix that is protein packed and on the back of the box they have a muffin recipe. Follow that recipe but add 1 cup of fresh blueberries! Instead of brown sugar my mom substitutes Stevia packets (10 per recipe). I’ve liked them so far but I also tried 5 packets of Stevia with half the brown sugar they call for. Of course I am sure they are equally good using the brown sugar they call for too!

I suggest making a double batch (which will need 2 cups of blueberries) and freezing them. 2 muffins (frozen) take about 30-40 seconds to reheat in the microwave.
